Customer Review: Slow Cooker Meets the Microwave!

Like everyone else says, we all have heard the warnings about pressure cookers and most folks in my generation have bad memories of exploding pressure cookers that scalded everyone within range.
Yet, mom, grandma and big restaurants all over the country know that if you want speed AND tenderness, you use a pressure cooker (that's one of KFCs "secrets".)
When my wife and I decided to buy a pressure cooker, we decided to go electric because of the extra safety the regulated temperatures would provide. It took a lot of hunting as no one in Las Vegas stocked one or even knew that one existed! We finally bought one over the web for about $200.00. You now know it as the Russell Hobbs 8 Qt shown here, when we bought it was the Farberware 8 Qt by Salton. Ours has been used at least three times a week for almost two years and has been flawless.
I have cooked (yes, I'm the cook in the family), numerous cuts of beef, pork and chicken, beans, stews, brown rice, etc. and this thing is FAST!
To prepare a roast beef dinner, I drop in a roast, sprinkle with seasonings, add a can of beef broth, some minced garlic, quartered onions, a few bay leaves, baby carrots and some peeled potatoes.
Lock the lid in place, set on high, set timer for 70 minutes and go away. It takes about 20 minutes for the steam to build up to where it actually starts cooking. So in 90 minutes I come back and start preparing any other quick dishes (bisquits, etc.) to go with the meal. With beef, you let the pressure escape naturally, this provides the most tenderness. So after about another 20-30 minutes, you can open the lid, remove the potatoes and either quarter them, or smash them. Be careful lifting out the roast as it'll start falling apart as soon as it leaves the juices.
That's two hours for a full roast beef dinner and it doesn't heat up the kitchen. And that's about the longest you'll ever run the pressure cooker.
Most pork cuts are about 20 minutes cook time, plus 20 minutes steam build up. You release the pressure using the big red knob doing it in bursts. Takes less than five minutes. Imagine country style boneless pork ribs that fall apart as you spear them, done in 45 minutes! (I use a cup of water plus a cup of home made BBQ sauce for my cooking juice.)
BTW, like pulled pork? The above described rib meat works great for that. I take it straight out of the pot a chunk at a time and mash it with a table fork. Most of it doesn't even need "pulling". Once you've done that, you can mix it with BBQ sauce for great sandwiches, use it for enchiladas and burritos, etc. or even freeze some for later use.
The only thing I've seen that makes meats this tender is a slow cooker that literally takes all day.
Our pressure cooker has greatly reduced the amount of time I have to spend in the kitchen, keeps our kitchen cooler and lets me make "big" dinners much more often.
Updated 2006 Review as of March 19, 2009. After three years or so, this pressure cooker is still working like a charm. Many have complained that the electronics on theirs died quickly. It may be that we have a good one, or the fact that I unplug it when not in use has extended the life of the pressure cooker. I don't know but I'm still very glad that I purchased this.
